BBQ Recipes: Summer Edition
Summer. The time for sunshine and water fights, holidays and family time. However, it is also the best time for food! Summer is the best time to whip out the BBQ and relax in the garden with your friends and family. So here are some unique recipes, perfect for impressing your guests and enjoying in the sunshine.
Pork & Pineapple skewers
These are a perfect healthy alternative treat for a BBQ, good for snacking or for kids. They’re also simple to make as all you need to do is grill the pork and pineapple (along with any other foods you include on the skewer), add any sauces or spices, then thread everything onto a skewer ready to serve.
Pulled Pork
Pulled pork is the perfect way to stick to traditional BBQ meats, but with a twist to jazz up the menu. This, again, is a simple dish. All you need is to put the pork in a casserole dish with 2 mugs of cider. Leave it to cook between 4-8 hours. Keep checking throughout, if it looks dry add more cider if needed. When the pork is done, rip it apart with two forks and add BBQ sauce. Serve in cobs, or however you’d prefer.
Barbecued Broccoli, Cauliflower and Halloumi
Broccoli, cauliflower and halloumi aren’t traditional BBQ staples, however, this recipe is the perfect healthy and vegetarian alternative. Simply boil the broccoli and cauliflower in hot water for 3 mins. Then add them to the grill for 2 mins. Add the halloumi and only grill that for 1 min. Season with your preferred flavours and serve in a bowl with rice.
Buttery Baked Corn on the Cob
Corn on the cob is a classic BBQ favourite. This recipe puts a twist on the traditional version to make it even tastier. All you need to do is mix butter garlic and parsley together in a bowl. Cover however many corns you have with the mixture and wrap them in foil. Cook them on the barbecue for 30-35 mins and enjoy!
